Last Minute Goodies

Did December just fly by for you too? Honestly I couldn’t believe today was already the 20th! If you’re feeling a little overwhelmed and stretched for time, then you’re in luck because today I’m going to share a super quick, very yummy holiday treat and a few links to the old favorites. This weekend I took photos for a Christmas Party that I attended. I was strolling around looking for interesting shots when I came upon a couple plates filled with the usual cookies. Then something caught my eye, it looked as though someone had made pralines but with a twist, they were placed on graham crackers! One bite and I was convinced I needed to try and figure out the recipe. The thing that makes these so delicious is the fact that the caramel soaks in through the little holes in the graham cracker and surrounds it in flavor. Now, I know there’s something else besides S’mores and pie crust that graham crackers are good for! I’m sure these have a name but I couldn’t ask all 200 people in attendance if they knew what these delectables were called, so I think I’ll call them Cowboy Graham’s, since the party had a western flair. If you read my last post about the cranberry, candied Pecan cookies, you’ll have a better grasps on how to make these treats. You can go about making the caramel in a couple ways, simple butter and sugar, or add whipping cream and vanilla extract or use about 1/2 cup more of sugar and create a more toffee like topping. I did a combo of sugar, both brown and white with butter and a teaspoon of vanilla extract. It took about twelve hours for the crackers to finally set. I’m sure it would have been faster in the fridge but I didn’t have room. I think next time I’ll make them with more sugar or less butter and go for the toffee like topping. Here’s the super simple recipe for Cowboy Grahams.

  • Cowboy Grahams
  • 12 Graham crackers broken in half
  • 1 cup packed light brown sugar
  • 1 cup butter
  • 1 cup chopped pecans
  • Preheat oven to 350 degrees
  • Place the twelve Graham crackers on a foil lined baking sheet break in half, keep close together
  • Melt butter in a sauce pan
  • Add the sugar and keep stirring until it bubbles
  • Cook for another 2-3 minutes stirring constantly
  • Remove from heat and fold in Pecans
  • Spread mixture evenly over the Graham crackers
  • Place in the oven and baked for 8-10 minutes
  • Remove from oven and place on a wire rack to cool
  • While still warm you could sprinkle salt over the caramel
  • Enjoy!

That’s all there is to it! Give it a try because it just might become one of your go-to quick and easy treats that can be made at anytime of the year. I think many things could be added as stated earlier in this post, but, you could also drizzle some melted white or dark chocolate over them or use almonds or another type of nut.
