Hello everyone! I hope you all are doing well and getting ready for Christmas or whatever holiday you might celebrate. Once again December has flown by, so this post comes in a timely manner. I came across this incredibly easy and delicious treat that you can make in 5 min. I’m not kidding, the only thing that takes longer is letting it cool before devouring it. Just a little warning, these morsels can become very addictive. I’m talking about Butterscotch Haystacks, with or without peanut butter, either way they are simple, quick and delicious. I was amazed that I had never made these before. In my mind the Haystacks I’ve eaten were made with shredded coconut and chocolate. The confection I’m going to show you today is made with either two or three ingredients. All you need is a package of chow mein noodles, (like La Choy brand), one bag of butterscotch chips and a quarter cup of peanut butter. That’s it! When my son first tried them he said, ” Nice I like the pretzels.” that lead me to some research and an experiment. So yes if you can’t find chow mein noodles you certainly can use pretzel sticks. Let’s get to it!
- Butterscotch Haystacks
- 1- 12 ounce bag of butterscotch chips. (This years bag I bought was only 11 ounces, guess they’re cutting back!)
- 5 ounces chow mein noodles ( pretzel sticks can be substituted)
- 4 tablespoons peanut butter (Optional, tastes great either way. Peanut butter’s end result is a little stickier)
- A cookie sheet with wax or parchment paper laid on top
- In a microwave safe bowl melt the butterscotch chips and peanut butter (if using), in 30 second intervals, stir at the end of each interval until the chips have melted. Cook until just melted, be careful the bowl can get really hot.
- Stir in the chow mein noodles a little at a time to insure even they become evenly coated.
- Using a spoon place them on the lined cookie sheet and put in the fridge until set.
- Try and eat just one!
I’m not really sure why these are so yummy, maybe it’s because they satisfy the sweet crunchy part of our brain.
